Not many people are familiar with this combination of eggplant(baingan) and minced meat(qeema) cooked with assorted masalas. My mother made this dish some where in 2007 for the first time and all of us instantly fell in love with it.
Finely chop the onion and sauté in oil until light brown. Then add the ginger garlic paste, tomatoes, salt, red chili powder, turmeric powder and zeera. Cook on medium heat till water is almost dried. Add mince meat mix and dry the water again. Add a cup of water cover and cook till meat is tenderized and the water dries. Add eggplant and green chilies and cook till the eggplants are soft. (10-15 minutes). Sprinkle garam masala powder and coriander powder cover and let it cook for another 2-3 mins on low flame. Garnish with fresh green Coriander leaves, green chilies and Ginger slices and lemon. Serve with roti/naan/ boiled rice.
