Mutton Karahi

Mutton karahi is a simple yet delicious kind of meat dish made with blend of few spice and tomatoes, you can have it for lunch or dinner and it goes very well with nans and salad...

Karahi gosht

Ingredients:

1 Kg Mutton (karahi cut)
500g tomatoes 
2 medium onions (sliced)
1-1/2 tsp crushed black pepper (Kali Mirch)
1 tsp red chili powder
Salt  to taste
1 tsp cumin seeds
1 black cardamom (only need the seeds)
1 tsp fenugreek leaves (qasoori methi)
3/4 cup oil
1 tbsp ginger garlic paste
2 inch piece of ginger thinly sliced


Method: 


In a pan or karahi add mutton, ginger garlic paste, onions and 2-3 cups of water. Cover and cook on low heat till the mutton is almost done, Mean while grind cumin seeds, black cardamom seeds and fenugreek leaves together, and keep aside.
Once the mutton is almost done, add oil, tomatoes, red chili powder and salt, Cover and let it cook for 15 minutes or until the water from tomatoes have reduced to half and mutton is done, next add the crushed black peppercorn and green chilies, and fry on high flame for 5 minutes, add ginger slices and ground masala (cumin seeds, black cardamom seeds, fenugreek leaves). Cover and let it cook on low flame for 10 minutes, turn off the flame, garnish with chopped green chilies, freshly squeezed lemon juice and thinly sliced garlic, serve hot.

Note: Don't make it to dry, the gravy should be a bit thick but not on the dry side.
