Chow mein is a classic Chinese dish and is very popular among chines food lovers all over the world. It consist of noodles mixed with stir fried vegetables and small pieces of chicken, beef, or shrimps...
Ingredients:
1 pack egg noodles/spaghetti (400g)
250gm chicken Brest (cut in strips)
1 large green capsicum (julienned/cut into strips)
2 carrots (cut in thin strips)
1cup cabbage (finely sliced/shredded)
1 tbsp chopped garlic
1 medium onion (thinly sliced)
2 green onion stalks (finely chopped)
2 tbsp soya sauce
1 tsp sugar
½ Salt (or to taste)
1 tsp corn flour
½ tsp white pepper or black pepper powder
2 tbsp vinegar
½ tsp chicken powder
3-4 tbsp groundnut oil or vegetable oil
1tsp sesame oil ( don't have it, skip it)
Method:
1) Marinate the chicken with 1 tsp corn flour, 1/4 tsp black pepper, 1/4 tsp salt and 1 tsp soya sauce. Marinate it for half an hour at least.
2) Prepare the vegetables, cook the noodles in boiling water for 3 minutes, remove from heat, rinse with cold water, drain and set aside. If using spaghetti, follow the instruction as given on packet, drain and set aside.
3)Heat oil in a wok or wide pot, add the chicken strips and fry 3-4 minutes, take the out and keep aside.
4) In the same pan add in chopped garlic and onion and fry for 2-3 minutes. (Use more oil if needed)
5) Add in the chicken strips followed by carrots, cabbage and capsicum, sauté for 2-3 minutes with frequent stirring.
6) Mix the salt, pepper, sugar, soya sauce, vinegar and sesame oil in a small bowl. ( For a spicier chow mein you can add in 1/4 cup of tomato ketchup and 2 tbsp of chili sauce too)
7) Add noddles and green onions to the chicken and vegetable, pour the sauce over the noddles, toss well and heat throughout for 2-3 minutes. Serve hot.
