I absolutely loved McArabia the very first time i had it and thought of giving it a try at home. So just like me if you wonder how to make this yummy pita sandwich at home which taste pretty much like the one you would buy from McDonald's, here is the recipe....
Ingredients for pita bread
1/2 cup warm water (not hot or boiling)
1 teaspoons active dry or instant yeast
1 ½ cup cups all-purpose flour
1 teaspoons salt
1 tsp nigella seeds
1-2 teaspoons olive oil (optional)
Method:
1) Mix the water and yeast together, and let sit for about 5 minutes until the yeast is dissolved. Add 1&1/2 cups of the flour , salt, nigella seeds and olive oil.
2. Knead the dough for about 5-7 minutes, until the dough is smooth and elastic. Add more flour as needed to keep the dough from sticking to your hands or the work surface.
3. Put a little olive oil on your palms and rub it over the dough ball. Set the dough in the bowl, cover with a clean dishcloth or plastic wrap and let the dough rise until it's doubled in bulk (1-2 hours).
4) Gently deflate the dough and turn it out onto a lightly floured work surface. Divide the dough into 4 equal balls.
5) Using a floured rolling pin, roll one of the pieces into a circle 8-9 inches wide and about a quarter inch thick. Lift and turn the dough frequently as your roll to make sure the dough isn't sticking to your counter. Sprinkle with a little extra flour if its starting to stick. If the dough starts to spring back, set it aside to rest for a few minutes, then continue rolling. Repeat with the other pieces of dough.
6) Heat up a non-stick frying pan over medium-high heat. Take a flattened ball and put in a hot frying pan. Cover with lid. Leave for about 2-3 minutes, until it puffs up. Flip over and cook for another 2-3 minutes on the other side. Cover them to retain softness and set aside.
Ingredients for chicken patties:
500 gm minced meat (chicken, beef or mutton)
1 tsp salt
1/4 tsp red paprika powder
1 tsp garlic paste
1/4 tsp allspice (optional)
1 small onion minced
½ tsp black pepper powder
1 tbsp lemon juice
2-3 tbsp bread crumbs
Method:
Mix everything together well. Divide the mixture into 8 balls. Shape them into patties, moisten hands if necessary and try to flatten them well. Heat some oil in a pan and shallow fry the patties until cooked on both sides.
Ingredients for tahini sauce:
½ cup mayonnaise (you can also use plain yogurt)
1 tbsp tahini
1/3 tsp garlic powder
½ tsp lemon juice
salt to taste
Mix all the ingredients in a small bowl until well blended
To Assemble:
Tahini sauce
Lettuce
Tomato Slices
onion rings
To assemble, take pita bread, spread some tahini. Add chopped lettuce, onion rings, tomato slices. Top with 2 of the fried patties. Fold the pita in half to form a sandwich and enjoy. Assemble all the pitas in same manner and serve with potato fries or salad.
