Pineapple Fluff

This recipe was given to my sister by her friend years back, and I fell in love with it the very moment I tried it. Well it’s not something I would make every week as it is loaded with cream, but defiantly something that will stay on my favorites list for life time, call it pineapple fluff,  call it ambrosia salad  or pineapple cream what ever the name maybe, but it taste divine. And the good thing is its very easy to make.

Ingredients:

2 pack pineapple jelly
500 ml whipping cream (you can use any cream you normally use for deserts)
3-4 tbsp icing sugar
1 can of pineapple tidbits (567 gm sized can) 

Method:

1) Make jelly as per packet instructions (but use 2 ½ cups of water all together), let the jelly set. One it is set mix it all up with a fork (with a light hand)

2) Drain the pineapple tidbits and keep aside. If you want you can whip the cream or use it as it is. Put the cream in a bowl, fold in the icing sugar and pineapple tidbits. Gently fold in the jelly, pour the mixture in to a serving bowl and let it chill for 3-4 hours before serving.

Note: you can also add in mandarin oranges, and nuts of your choice, or if you want you can make it by using can of fruit cocktail instead of pineapple tidbits.
