An interesting and utterly delicious egg paratha recipe, excellent to make for weekend breakfast, kids will love it for sure. You can make it just like the way i have done, or just whisk an egg lightly add in some salt and pepper and pour it over the paratha for a less spicy version.
Ingredients:
1 egg
½ small onion (finely chopped)
1 small green chili (chopped)
½ tomato (deseeded and finely chopped)
I tsp chopped fresh coriander
Salt as per taste
¼ tsp red chili powder
A pinch of turmeric powder
Oil/ghee as required
Dough for paratha (I used the normal dough I knead for
making roti)
Method:
1) Break the egg in a small bowl. Add in the chopped onions,
chopped green chilies chilies, chopped tomato, cilantro, red chili powder,
turmeric powder and salt to the eggs well. Whisk this mixture well.
2) Heat the tava or griddle on low medium flame. Take a medium
sized ball from dough, roll into a quarter plate size, spread 1 tbsp of ghee
all over, cut a slit from the outer edge till the center, start rolling from
the slit to form cone. Roll out in to a thick paratha.
3) Take the rolled paratha and keep it on the tava. Cook the
paratha on medium flame. Place the paratha on a hot tava (griddle), after a few
seconds you will see it getting puffed in different places, flip it over. After
a few seconds, spread 1 teaspoon of oil or ghee on the paratha.
4) Pour the egg mixture on the paratha, spread the egg mixture
on one side of the paratha with the help of a spoon. Pour some oil or ghee on
the egg mixture as well.
Turn over. Drizzle some oil or ghee on the sides, lightly
press with a spatula. Let it cook for a minute. Flip and let the base cook for
a few seconds. Flip again and cook the egg mixture again till its nice and brown. serve hot.
