Creamy Potato Salad

A delightful, scrumptious and easy to prepare potato salad. Although it tastes great if served the same day you make, but it tastes out of this world the next day. Remember to serve it cold!!!!

Creamy Potato Salad

Ingredients:

 4-5 medium potatoes
1&1/2 cup mayonnaise
½ tsp dried parsley
½ tsp garlic powder
½ tsp onion powder
Salt to taste
¼ tsp red chili powder
¼ tsp black pepper
1 tbsp lemon juice
1 tbsp dijon mustard
2 stalk green onions (finely chopped)

Method:

1) Boil the potatoes and keep them aside until they get cool enough to handle. Peel and cut them in to cubes.

2) Whisk together mayonnaise, garlic powder, red chili powder, salt, black ppper powder, parsley, lemon juice, dijon mustard and onion powder until blended.

3) Add chopped green onions and potatoes to the mayonnaise dressing toss it nicely and refrigerate for at least 4hours before serving.
