I had these veggie sandwiches for lunch today and they are
utterly delicious. Vegetarian sandwiches offer a lot of
nutrition in a compact package. Don’t hesitate to experiment, you can also

Ingredients:
2 Bread slices or regular sandwich bread
1 Potato, boiled and thinly sliced (rounds)
1/2 cucumber thinly sliced
1/2 capsicum ,deseeded and thinly sliced (rings)
1 onion thinly sliced (rings)
1 Tomato thinly sliced rounds
1/4 cup Green Chutney( grind ½ a bunch of fresh coriander, ½ bunch mint, 1 green chili, juice of one big lemon(1tbsp), salt, ½tsp sugar, 2tbsp of water/ olive oil to a fine paste)
Chaat masala
Shredded or sliced cheese
Salt to taste

Method:
Apply green chutney on one side of both bread slices, (you can apply green chatni on one slice and mayonnaise on the other, if making without cheese)
Arrange the thinly sliced vegetables on each bread slice(don’t overload) and sprinkle salt and chaat masala over it. Place a slice of cheese, form sandwich and apply butter on the outer slices and toast it either in a frying pan or on tawa until its crisp and golden brown in color.
Cut it into half in Triangle shaped Toast. Eat it hot.
